Chinese Noodles

Prepare the Dough:   In a large mixing bowl, combine the all-purpose flour and salt. Gradually add the water to the flour mixture, stirring with a fork or chopsticks until a rough dough forms. Once the dough starts to come together, knead it with your hands until it becomes smooth and elastic, about 5-7 minutes. If the dough feels too dry, add a little more water, one tablespoon at a time. If it feels too wet, add a sprinkle of flour. Once the dough is kneaded to the right consistency, shape it into a ball and cover it with a damp cloth. Let it rest at room temperature for 30 minutes to 1 hour to allow the gluten to relax.

Roll Out the Noodles:   After the dough has rested, lightly dust your work surface with cornstarch or flour to prevent sticking. Divide the dough into 4 equal portions. Take one portion and flatten it with your hands into a rough rectangle shape. Using a rolling pin, roll out the dough into a thin sheet, about 1/16 to 1/8 inch thick. If the dough starts to stick, dust it lightly with more cornstarch or flour. Once the dough is rolled out, fold it into thirds like a letter. Use a sharp knife to cut the folded dough crosswise into thin strips, about 1/4 to 1/2 inch wide, to create the noodles. Carefully unfold the cut noodles and place them on a baking sheet lined with parchment paper or a clean kitchen towel. Repeat the process with the remaining portions of dough.

Cook the Noodles:   To cook the noodles, bring a large pot of water to a rolling boil. Carefully add the noodles to the boiling water, stirring gently to prevent them from sticking together. Cook the noodles for 2-3 minutes, or until they are tender but still slightly chewy. Once the noodles are cooked, drain them using a colander and rinse them under cold water to stop the cooking process. Toss the cooked noodles with a little sesame oil or vegetable oil to prevent them from sticking together.

Serve and Enjoy:   Homemade Chinese noodles can be served in a variety of dishes, such as soups, stir-fries, or noodle salads. Serve the noodles hot or cold, topped with your favorite sauces, proteins, and vegetables. Garnish with chopped green onions, cilantro, sesame seeds, or chili flakes for extra flavor and texture.
